Nine years on this corner
One fryer,one recipe card.
Sugarly started as a two-tray operation in a laundromat window. The card has not changed since we just got a second fryer, a coffee bar and two more people who can be here at four in the morning.
- 4th and Vine, under the pink awning
- Four of us, two shifts
- Roughly 600 a day
What changed
The second fryerbought us an hour.
For six years the whole case came off one fryer, which meant the last tray hit the rack at half past seven and the first customer had already left. The second one moved that to six, and six is the only promise on this website.
- Dough proofed overnight, never the same morning
- Glaze mixed in twelve-litre batches, twice a day
- Whatever is left at close goes to the shelter on Vine
2016 to now
Four thingsworth writing down.
Two trays in a laundromat window
Forty-eight donuts a morning, sold out of a folding table, cash only, gone by eight.
The corner unit
We took the lease on 4th and Vine, painted the awning pink and never repainted it.
The coffee bar
Cold brew on sixteen hours, single origin, because half the queue was walking next door for it.
The second fryer
Doors at six instead of seven, and the Friday drop became a standing appointment.
We are not trying to reinvent the donut. We are trying to hand you one that is four minutes old, in a paper bag that is already going translucent, before you have decided what kind of day this is.
House standards
Three rulesnobody argues with.
They are taped to the wall behind the fryer, and they have been reprinted twice because of the grease.
01
Nothing sits past close
The case is emptied every night. What is left goes to the shelter two doors down before we lock up.
02
The card is public
Every price is on the wall and on the menu page. Nobody has ever had to ask what a dozen costs.
03
One drop, once
The Friday cruller never repeats inside a season. If you liked it, that was the week for it.
You could justcome and try one.
Six in the morning until seven at night. The coffee bar closes at five, which surprises people every single day.
